How should I store my macarons once they arrive?

To maintain their delicate texture, macarons should be kept refrigerated in an airtight container. They are best enjoyed at room temperature, so we recommend taking them out of the fridge about 15–20 minutes before serving. If you are saving them for a future date, they can be frozen for up to one month.

Are your macarons gluten-free? 

Yes! By nature, the French macaron is made with almond flour rather than wheat flour, making our entire macaron collection naturally gluten-free. Please note, however, that while we take every precaution, our kitchen is not a certified gluten-free facility.

How long will they stay fresh? When stored properly in the refrigerator, our macarons remain perfectly fresh for 5 to 7 days. Because we use real ingredients and no preservatives, they are a "live" product intended to be enjoyed close to their creation date.

What does ‘high quality ingredients’ mean? 

At Rêve, quality isn't just a buzzword—it’s the foundation of every shell and ganache. It means we use super-fine, non-GMO California almond flour, organic eggs, and high-fat European-style butter. Our chocolate is sourced from premier producers Cacao Adventures and Cacao Barry, and our fillings are made with real fruit purées and Tahitian vanilla beans rather than artificial extracts or shelf-stable shortcuts. You can taste the difference in the depth of flavor and the clean finish.

Are the macarons authentic? 

Absolutely. We honor the heritage of French pastry by following the traditional French Méthode using a stable Italian meringue base. This process requires a precise and masterful macaronnage (folding technique) to achieve the hallmark of a true artisan macaron: a perfectly smooth, domed shell and dainty, ruffled "feet."

Our macarons offer the classic, sought-after contrast that defines the authentic French macaron experience: a delicate, slightly crisp exterior that yields to a soft, chewy, and flavor-dense center. We never take shortcuts or use pre-made mixes; we are dedicated to the slow, meticulous craft of the traditional patisserie.

Meet the Chef

I'm from Bordeaux, and I've had a sweet tooth my whole life. I baked with my family growing up, long before any of this was a business. Before Rêve, I worked in hospitality as a concierge and travel planner. That work taught me an important lesson I still believe: the moment people remember isn't the grand gesture — it's the small, considered detail waiting on the table when they walk in.

Somewhere along the way, the macaron became the baking challenge I had to get right. I taught myself, one batch at a time, and I've become exacting about it. Real almonds, real fruit, incredible chocolate and cream. I make every one by hand, here in Santa Barbara.
